These protein packed breakfast tacos are the perfect way to start your off your day

Ingredients
  

  • 1/2 cup Gluten-Free flour blend
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Large egg
  • 1/4 cup Milk
  • 1 tbsp Olive oil
  • 1/2 cup Diced cooked potatoes
  • 1/4 cup Cooked bacon or sausage, diced
  • 1/4 cup Bell pepper
  • 1/4 cup Diced onion
  • 1/4 cup Shredded cheddar cheese
  • 2 tbsp Chopped fresh cilantro
  • Salsa or sour cream for serving optional

Instructions
 

  • In a medium mixing bowl, whisk together the glutenfree flour, baking powder, and salt.
  • In a separate small mixing bowl, beat the egg and milk together.
  • Pour the egg mixture into the flour mixture and stir until well combined.
  • Heat a large skillet over medium heat and add the olive oil.
  • Once the oil is hot, spoon 2 tablespoons of the batter into the skillet to form a small taco-shaped pancake. Repeat until you have used all the batter.
  • Once bubbles form on the surface of the pancake, flip it over and cook for an additional minute or until golden brown.
  • Repeat until all the pancakes are cooked.
  • To assemble the tacos, add some of the diced potatoes, bacon or sausage, bell pepper, onion, cheese, and cilantro to the center of each pancake. Mix it up however you like!
  • Serve with salsa and sour cream, if desired.
