Gluten-Free Cauliflower Fried Rice

Ingredients
- 1 Head of cauliflower Grated
- 2 tbsp Vegetable oil
- 1 Onion Diced
- 2 Cloves of garlic Minced
- 1 cup Frozen peas and carrots
- 2 Eggs Lightly beaten
- 3 tbsp Gluten-free soysauce
- 1 tbsp Sesame oil
- Salt and pepper To taste
Instructions
- In a large skillet or wok, heat vegetable oil overmedium-high heat. Cook until the onion andgarlic are softened.
- Cook for 3-5 minutes, or until the vegetables aretender, after adding the grated cauliflower, peas,and carrots.
- Push the cauliflower mixture to the side of theskillet, and add beaten eggs to the other side ofthe skillet. Scramble the eggs until they arecooked.
- Mix the scrambled eggs into the cauliflowermixture.
- Stir in soy sauce and sesame oil, and cook for anadditional 2–3 minutes, or until heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy your gluten-free cauliflowerfried rice.
