Ingredients
- 1 lbs Ground turkey
- 1 Onion Diced
- 2 Cloves of garlic Minced
- 1 Red bell pepper Diced
- 1 Sweet potato Peeled and diced
- 1 can (14.5 oz) Diced tomatoes
- 1 can (15 oz) Kidney beans, rinsed anddrained
- 1 cup Gluten-free chicken broth
- 1 tbsp Chili powder
- 1 tsp Ground cumin
- Salt and pepper To taste
- Sour cream, shredded cheese Andchopped fresh cilantro for garnish(optional)
Instructions
- In a large pot or Dutch oven, heat some oil overmedium heat. Add the turkey, onion, and garlic,and cook until the turkey is browned.
- Add red bell pepper, sweet potato, dicedtomatoes, kidney beans, chicken broth, chilipowder, cumin, salt, and pepper. Bring thewater to a boil.
- Reduce the heat to low and let the sweet potatosimmer for 25-30 minutes, or until tender
- Serve hot and garnish with sour cream,shredded cheese, and cilantro, if desired.
