Ingredients
- 2 tbsp Olive oil
- 1 Onion Diced
- 3 Cloves of garlic Minced
- 2 cups Diced tomatoes
- 2 cups Grated zucchini
- 1/4 cup Grated Parmesancheese
- 2 tbsp Chopped freshbasil
- Salt and pepper To taste
Instructions
- Preheat the oven to 375 degrees F (190 degreesC).
- In a large skillet, heat the olive oil overmedium heat. Add the onion and garlic andsauté until softened, about 5 minutes.
- Stir in the diced tomatoes and gratedzucchini. Cook for an additional 5 minutes, oruntil the vegetables are tender.
- Remove the skillet from the heat and stir inthe Parmesan cheese, basil, salt, and pepper.
- Transfer the mixture to a baking dish andbake for 20–25 minutes, or until the top isgolden brown and bubbly.
