Ingredients
  

  • 1 lbs Boneless, skinless chicken breast Cut into bite-size pieces
  • 2 tbsp Olive oil
  • 2 Cloves of garlic Minced
  • 1 Red bell pepper Sliced
  • 1 Small head of broccoli Florets only
  • 1 Small onion Sliced
  • 1 cup Mushrooms Sliced
  • Salt and pepper to taste
  • 2 tbsp Fresh parsley Chopped

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat
  • Add the chicken to the skillet and cook for about 6–8 minutes, or until cookedthrough.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add garlic, red bell pepper, broccoli, onion, and mushrooms. Cook until the vegetables are tender and lightly browned.
  • Add the cooked chicken back to the skillet and toss to combine.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley and serve
