Ingredients
  

  • cup Gluten-free flour (you can use a combination of almond flour coconut flour, and/or oat flour)
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 Ripe banana mashed
  • 1 Egg
  • 1/2 cup Almond milk or any other milk
  • 1 tablespoon Honey or any other sweetener
  • 1 teaspoon Vanilla extract
  • Butter or oil for cooking

Instructions
 

  • In a medium-sized mixing bowl, combine the flour, baking powder, and salt.
  • In a separate bowl, whisk together the mashed banana, egg, almond milk, honey, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable.
  • Heat a nonstick skillet or griddle over medium heat. Add a small amount of butter or oil to the skillet.
  • Using a ladle or measuring cup, pour about 1/4 cup of batter per pancake onto the skillet. Cook for about 23 minutes per side, or until golden brown.
  • Serve with your favorite toppings, such as fresh fruit, maple syrup, or peanut butter.
