Ingredients
  

  • 1/2 lb Gluten free breakfast sausage
  • 1/2 cup Diced onion
  • 1/2 cup Diced bell pepper
  • 1/2 cup Diced mushroom
  • 1/2 cup Shredded cheddar cheese
  • 1/2 cup Heavy cream
  • 6 Large eggs
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9-by-13inch baking dish.
  • In a large skillet, cook the breakfast sausage over medium heat until browned. Drain any excess fat.
  • Add the diced onions, bell peppers, and mushrooms to the skillet and sauté until softened.
  • In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  • Stir in the cooked sausage mixture and shredded cheese, and pour into the prepared baking dish.
  • Bake for 25–30 minutes or until the center is set and the top is golden brown.
  • Let the casserole cool for a few minutes before serving.
