Ingredients
- 1 cup Gluten-free flour blend
- 1 teaspoon Sugar
- 1/4 teaspoon Salt
- 1 cup Milk
- 2 Large eggs
- 1 tablespoon Melted butter
- 1 teaspoon Vanilla extract
- Butter or oil for cooking
- Fillings of your choice such as fresh fruit, yogurt, and honey
Instructions
- In a large mixing bowl, whisk together the glutenfree flour blend, sugar, and salt.
- In a separate small mixing bowl, whisk together the milk, eggs, melted butter, and vanilla extract
- Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms
- Heat a non-stick skillet over medium heat and add a small amount of butter or oil
- Once the skillet is hot, ladle about 1/4 cup of the batter into the skillet. Tilt the skillet to spread the batter evenly.
- Cook the crepe for 1-2 minutes on one side, then flip and cook for an additional 30 seconds on the other side.
- Repeat until all the batter is gone
- Fill the crepes with the fillings of your choice and serve warm
