Ingredients
  

  • 1 Head of cauliflower Grated
  • 2 tbsp Vegetable oil
  • 1 Onion Diced
  • 2 Cloves of garlic Minced
  • 1 cup Frozen peas and carrots
  • 2 Eggs Lightly beaten
  • 3 tbsp Gluten-free soysauce
  • 1 tbsp Sesame oil
  • Salt and pepper To taste

Instructions
 

  • In a large skillet or wok, heat vegetable oil overmedium-high heat. Cook until the onion andgarlic are softened.
  • Cook for 3-5 minutes, or until the vegetables aretender, after adding the grated cauliflower, peas,and carrots.
  • Push the cauliflower mixture to the side of theskillet, and add beaten eggs to the other side ofthe skillet. Scramble the eggs until they arecooked.
  • Mix the scrambled eggs into the cauliflowermixture.
  • Stir in soy sauce and sesame oil, and cook for anadditional 2–3 minutes, or until heated through.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy your gluten-free cauliflowerfried rice.
