Ingredients
- 1 lbs Boneless, skinless chicken breast Cut into bite-size pieces
- 2 tbsp Olive oil
- 2 Cloves of garlic Minced
- 1 Red bell pepper Sliced
- 1 Small head of broccoli Florets only
- 1 Small onion Sliced
- 1 cup Mushrooms Sliced
- Salt and pepper to taste
- 2 tbsp Fresh parsley Chopped
Instructions
- In a large skillet, heat the olive oil over medium-high heat
- Add the chicken to the skillet and cook for about 6–8 minutes, or until cookedthrough.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add garlic, red bell pepper, broccoli, onion, and mushrooms. Cook until the vegetables are tender and lightly browned.
- Add the cooked chicken back to the skillet and toss to combine.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve
