Ingredients
  

  • 1 lbs Boneless Skinless chicken breast
  • 2 tbsp Olive oil
  • 2 Cloves of garlic Minced
  • Salt and pepper to taste
  • 2 cups Halved cherry tomatoes
  • 1 English cucumber Diced
  • 1/2 cup Diced red onion
  • 1/2 cup Crumbled feta cheese
  • 1/4 cup Chopped fresh parsley
  • 1/4 cup Chopped fresh mint
  • 2 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 1 tsp Dried oregano

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together olive oil, garlic, salt, and pepper.
  • Place the chicken breast in a plastic bag, pour the marinade over the chicken, and seal the bag. Massage the chicken to evenly coat it with the marinade.
  • Grill the chicken for 6–8 minutes per side or until cooked through. Remove from the heat and set aside for a few minutes before slicing.
  • In a large bowl, combine tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
  • In a small bowl, whisk together red wine vinegar, lemon juice, and oregano.
  • Drizzle the dressing over the salad and toss to combine.
  • Add the sliced chicken to the salad and toss to combine.
  • Serve and enjoy!
