Ingredients
- 1 lbs Boneless Skinless chicken breast
- 2 tbsp Olive oil
- 2 Cloves of garlic Minced
- Salt and pepper to taste
- 2 cups Halved cherry tomatoes
- 1 English cucumber Diced
- 1/2 cup Diced red onion
- 1/2 cup Crumbled feta cheese
- 1/4 cup Chopped fresh parsley
- 1/4 cup Chopped fresh mint
- 2 tbsp Red wine vinegar
- 1 tbsp Lemon juice
- 1 tsp Dried oregano
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together olive oil, garlic, salt, and pepper.
- Place the chicken breast in a plastic bag, pour the marinade over the chicken, and seal the bag. Massage the chicken to evenly coat it with the marinade.
- Grill the chicken for 6–8 minutes per side or until cooked through. Remove from the heat and set aside for a few minutes before slicing.
- In a large bowl, combine tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
- In a small bowl, whisk together red wine vinegar, lemon juice, and oregano.
- Drizzle the dressing over the salad and toss to combine.
- Add the sliced chicken to the salad and toss to combine.
- Serve and enjoy!
