Ingredients
- 4 Boneless Skinless chicken breasts
- 2 tbsp Olive oil
- Salt and pepper To taste
- 1/4 cup Diced red onion
- 1/4 cup Diced cucumber
- 1/4 cup Diced bell pepper
- 1/4 cup Diced cherry tomatoes
- 1/4 cup Crumbled feta cheese
- 1/4 cup Chopped fresh parsley
- 2 tbsp Fresh lemon juice
- 1 tbsp Wine vinegar
- 1 tbsp Dijon mustard
- 1 Clove of garlic Minced
Instructions
- Preheat a grill to medium-high heat.
- Brush the chicken breasts with olive oil andseason with salt and pepper.
- Grill the chicken for 6–8 minutes per side,or until cooked through. Let the chickencool, then chop into bite-size pieces.
- In a large bowl, combine the choppedchicken, red onion, cucumber, bell pepper,cherry tomatoes, feta cheese, and parsley.
- In a small bowl, whisk together the lemonjuice, red wine vinegar, Dijon mustard, andgarlic. Drizzle the dressing over the saladand toss to combine.
