Ingredients
- 2 Large eggs
- 2 tbs Almond milk or water
- Salt and pepper to taste
- 1 tso Olive oil or butter
- 1/4 cup Diced vegetables of your choice (such as bell Peppers mushrooms, onions, or spinach)
- 1/4 cup Shredded cheese (such as cheddar or Mozzarella)
Instructions
- Whisk together the eggs, almond milk or water, salt,and pepper in a small bowl.
- Heat the oil or butter in a small non-stick skillet over medium heat.
- Add the diced vegetables and cook until they are softened, about 3-5 minutes.
- Pour the egg mixture over the vegetables and sprinkle with cheese.
- Cook until the bottom is set and the top is slightly runny, about 2–3 minutes.
- Carefully fold the omelette in half and cook for an additional 1–2 minutes, or until the cheese is melted and the eggs are fully cooked.
- Serve immediately.
