Ingredients
  

  • 4 Bell peppers Any color
  • 1 lbs Ground beef or turkey
  • 1 Onion Diced
  • 2 Cloves of garlic Minced
  • 1 cup Cooked quinoa
  • 1 cup Diced tomatoes
  • 1/4 cup Grated Parmesan cheese
  • 1/4 cup Chopped fresh parsley
  • Salt and pepper To taste
  • 1 cup Shredded mozzarella cheese

Instructions
 

  • Preheat the oven to 375°F. Cut the tops off thebell peppers and remove the seeds andmembranes.
  • In a large skillet, brown ground beef or turkeyover medium heat. Cook until the onion andgarlic are softened. Drain any excess fat.
  • Stir in quinoa, diced tomatoes, Parmesancheese, and parsley. Season with salt andpepper.
  • Stuff the bell peppers with the beef mixture andplace them in a baking dish.
  • Top each pepper with shredded mozzarellacheese.
  • Bake for 25–30 minutes or until the peppers aretender and the cheese is golden and bubbly.
