Ingredients
- 4 Bell peppers Any color
- 1 lbs Ground beef or turkey
- 1 Onion Diced
- 2 Cloves of garlic Minced
- 1 cup Cooked quinoa
- 1 cup Diced tomatoes
- 1/4 cup Grated Parmesan cheese
- 1/4 cup Chopped fresh parsley
- Salt and pepper To taste
- 1 cup Shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F. Cut the tops off thebell peppers and remove the seeds andmembranes.
- In a large skillet, brown ground beef or turkeyover medium heat. Cook until the onion andgarlic are softened. Drain any excess fat.
- Stir in quinoa, diced tomatoes, Parmesancheese, and parsley. Season with salt andpepper.
- Stuff the bell peppers with the beef mixture andplace them in a baking dish.
- Top each pepper with shredded mozzarellacheese.
- Bake for 25–30 minutes or until the peppers aretender and the cheese is golden and bubbly.
