Ingredients
  

  • 1 lbs Ground turkey
  • 1 Onion Diced
  • 2 Cloves of garlic Minced
  • 1 Red bell pepper Diced
  • 1 Sweet potato Peeled and diced
  • 1 can (14.5 oz) Diced tomatoes
  • 1 can (15 oz) Kidney beans, rinsed anddrained
  • 1 cup Gluten-free chicken broth
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • Salt and pepper To taste
  • Sour cream, shredded cheese Andchopped fresh cilantro for garnish(optional)

Instructions
 

  • In a large pot or Dutch oven, heat some oil overmedium heat. Add the turkey, onion, and garlic,and cook until the turkey is browned.
  • Add red bell pepper, sweet potato, dicedtomatoes, kidney beans, chicken broth, chilipowder, cumin, salt, and pepper. Bring thewater to a boil.
  • Reduce the heat to low and let the sweet potatosimmer for 25-30 minutes, or until tender
  • Serve hot and garnish with sour cream,shredded cheese, and cilantro, if desired.
