Ingredients
- 14 Boneless Skinless chicken breasts
- 1/4 cup Olive oil
- 2 Cloves garlic Minced
- 2 tbsp Lemon juice
- Salt and pepper to taste
- 1 Head of romaine lettuce Washed and chopped
- 1/2 cup Grated parmesan cheese
- 1/2 cup Croutons (gluten-free if desired)
- 2 tbsp Fresh parsley, chopped
- Caesar dressing (gluten-free if desired)
Instructions
- In a small bowl, mix together the olive oil, garlic, lemon juice, salt and pepper. Place thechicken in a plastic bag and pour the marinade over the chicken. Seal the bag and massagethe chicken to evenly coat it with the marinade. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Preheat the grill to medium-high heat. Grill the chicken for about 6-8 minutes per side, or until cooked through.
- Remove the chicken from the grill and let it cool for a few minutes. Cut the chicken into bite-size pieces.
- In a large bowl, combine the romaine lettuce, parmesan cheese, croutons, and parsley. Addthe chicken and toss everything together
- Drizzle Caesar dressing over the salad and toss to coat.
- Serve and enjoy!
