Grilled shrimp skewers with a gluten-free marinade

Ingredients
- 1 lbs Large peeled and deveined shrimp
- 1/4 cup Olive oil
- 2 Cloves of garlic Minced
- 1/4 cup Fresh cilantro Chopped
- 2 tbsp Lime juice
- 1 tsp Chili powder
- Salt and pepper to taste
- Skewers (if using wooden skewers,soak them in water for 30 minutes before grilling).
Instructions
- In a small bowl, mix together olive oil, garlic, cilantro, lime juice, chili powder, salt,and pepper
- Place the shrimp on skewers in a baking dish or plastic bag. Pour the marinadeover the shrimp and toss to coat. Marinate for at least 30 minutes or up to 2 hoursin the refrigerator.
- Preheat the grill to medium-high heat.
- Grill the shrimp skewers for about 2–3 minutes per side, or until cooked through.
- Serve immediately after removing from the grill.
